- 6 shiitake mushrooms (sliced into strips)
- ½ red bell pepper (sliced into thin strips)
- 1 medium carrot (sliced into thin strips)
- 1/2 pound baby spinach (roughly chopped)
- 3 stalks scallions (finely chopped on the bias)
