Baked Thai Tofu Satay with Peanut Sauce


INGREDIENTS
  • 1 package of firm fried tofu, approximately 350g
  • 4 wooden skewers, soaked in water
Tofu Marinade:
  • 2 Tablespoons of dark soy sauce
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of brown sugar
  • 1 teaspoon of garlic powder
Peanut Satay Sauce:
  • 1/4 cup of peanut butter
  • 1/3 cup of lite coconut milk
  • 2 Tablespoons of low sodium soy sauce
  • 1 Tablespoon of rice wine vinegar
  • 1/2 Tablespoon of sesame oil
  • 1 teaspoon of brown sugar
  • 1/4 teaspoon of freshly grated ginger
  • 1 Tablespoon of chili garlic sauce aka sambal (optional for spice)
  • 1/8 teaspoon of Thai red chili pepper flakes (optional for spice)
INSTRUCTIONS
  1. Preheat your oven to 425 degrees F.
  2. Combine the marinade ingredients in a medium bowl and toss the fried tofu pieces in them. Let the tofu marinate for at least 5 minutes.
  3. Skewer your tofu pieces onto the wooden skewers and lay them on top of a parchment paper lined sheet pan. Bake them in the oven for 10 minutes.
  4. Meanwhile combine the peanut satay sauce ingredients in a small bowl. Reserve half of the sauce for dipping later.
