INGREDIENTS
- 1 package of firm fried tofu, approximately 350g
- 4 wooden skewers, soaked in water
- 2 Tablespoons of dark soy sauce
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of brown sugar
- 1 teaspoon of garlic powder
- 1/4 cup of peanut butter
- 1/3 cup of lite coconut milk
- 2 Tablespoons of low sodium soy sauce
- 1 Tablespoon of rice wine vinegar
- 1/2 Tablespoon of sesame oil
- 1 teaspoon of brown sugar
- 1/4 teaspoon of freshly grated ginger
- 1 Tablespoon of chili garlic sauce aka sambal (optional for spice)
- 1/8 teaspoon of Thai red chili pepper flakes (optional for spice)
- Preheat your oven to 425 degrees F.
- Combine the marinade ingredients in a medium bowl and toss the fried tofu pieces in them. Let the tofu marinate for at least 5 minutes.
- Skewer your tofu pieces onto the wooden skewers and lay them on top of a parchment paper lined sheet pan. Bake them in the oven for 10 minutes.
- Meanwhile combine the peanut satay sauce ingredients in a small bowl. Reserve half of the sauce for dipping later.
