Salsa Quinoa
- 1 cup quinoa
- 2 cups water
- 1 tsp salt
- 1/2 cup easy homemade salsa (or jarred salsa)
Meal Prep Bowl Garnishes
- 1/2 chopped red onion
- 1/4 cup chopped cilantro (stems and all)
- 1 14 oz. can of whole kernel corn
- 1 avocado
- 1 lime
